  • 2 tblsp Chipotle in Adobo Sauce Chopped
  • 1 tblsp Lime Juice
  • 1 tblsp Garlic Minced
  • 1 tsp Cumin
  • 1 tsp Cilantro Chopped, for garnish
Bowls Toppings
  • 2 cups Cooked Rice White or brown
  • 1 cup Corn Grilled or canned
  • 1 cup Black Beans Rinsed and drained
  • 1 cup Avocado Sliced
  • 1 cup Lettuce Shredded
  • ½ cup Sour Cream Or Greek yogurt
  • ½ cup Salsa For serving

Method
 

Marinate Shrimp
  1. In a mixing bowl, combine shrimp, olive oil, chipotle sauce, lime juice, garlic, and cumin. Let marinate for 30 minutes.
Cook Shrimp
  1. Heat a skillet over medium-high heat. Add marinated shrimp and cook for about 5-7 minutes until they are cooked through and opaque.
Assemble Bowls
  1. In serving bowls, layer cooked rice, corn, black beans, avocado, shredded lettuce, and top with cooked shrimp.
  2. Drizzle with sour cream and salsa before serving.
