- In a small mixing bowl, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and a pinch of red pepper flakes. More flavor can be created with arrowroot powder added to the mixture later.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef, breaking it apart and cooking until browned.
- Reduce heat and stir in 3 minced garlic cloves and 1 tablespoon of grated fresh ginger. Sauté for 1-2 minutes until fragrant.
- Add 1 diced red bell pepper and 1 cup of shredded carrots to the skillet. Cook for 3-4 minutes until vegetables are slightly softened.
- Pour the prepared sauce over the beef and veggies. Stir to coat evenly and let it simmer for 2-3 minutes until thickened.
