For the Sauce
  • 2 tablespoons Maple Syrup or Brown Sugar/Coconut Sugar
  • 3 tablespoons Coconut Aminos or Tamari/Soy Sauce
  • 2 tablespoons Rice Vinegar or any light vinegar
  • 1 tablespoon Toasted Sesame Oil
For the Filling
  • 1 pound Ground Beef can substitute with ground pork or bison
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated
  • 1 large Red Bell Pepper diced
  • 1 cup Shredded Carrots optional
  • 2 stalks Green Onions chopped
  • to taste Kosher Salt
  • to taste Ground Pepper
For Assembly
  • 1 head Boston Bibb Lettuce or Romaine
  • to taste Sesame Seeds optional

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and a pinch of red pepper flakes. More flavor can be created with arrowroot powder added to the mixture later.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef, breaking it apart and cooking until browned.
  3. Reduce heat and stir in 3 minced garlic cloves and 1 tablespoon of grated fresh ginger. Sauté for 1-2 minutes until fragrant.
  4. Add 1 diced red bell pepper and 1 cup of shredded carrots to the skillet. Cook for 3-4 minutes until vegetables are slightly softened.
  5. Pour the prepared sauce over the beef and veggies. Stir to coat evenly and let it simmer for 2-3 minutes until thickened.
  6. Remove from heat and stir in 2 chopped green onions. Spoon the mixture into Boston Bibb lettuce leaves and garnish with sesame seeds.
