Step-by-Step Instructions
  1. Pat the brisket dry with paper towels, trim excess fat, and rub with kosher salt, black pepper, and spice rub to create a crust.
  2. Heat olive oil in a large skillet, sear the brisket on each side for 3-4 minutes until browned.
  3. Sauté sliced onions for 3-4 minutes, add minced garlic, and cook for another 30 seconds.
  4. Stir in beef broth, tomato paste, Worcestershire sauce, and apple cider vinegar; simmer for 1 minute.
  5. Pour sauce over brisket in the slow cooker, add bay leaves, and cook on Low for 8-10 hours or High for 5-6 hours.
  6. Remove brisket and let it rest for 20 minutes; strain and reduce sauce while resting. Slice and serve with gravy.
