  • 1 lb shrimp fresh or thawed, wild-caught preferred
  • 1 bunch asparagus snap off tough ends
  • 8 oz mushrooms shiitake, button, or portobello, sliced
  • 4 cloves garlic freshly minced
  • 2 tbsp olive oil or substitute with peanut or vegetable oil
For Flavoring
  • 3 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp lemon juice or lime juice
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Prepare the shrimp, asparagus, mushrooms, and garlic as described.
  2. Marinate the shrimp with soy sauce, half the garlic, and sesame oil for 15 minutes.
  3. Cook the marinated shrimp in a skillet for 2-3 minutes until pink and opaque.
  4. Stir-fry the asparagus and mushrooms in the same skillet for 4-5 minutes.
  5. Combine the remaining garlic, cooked shrimp, soy sauce, and lemon juice, toss to mix.
  6. Serve the stir-fry over jasmine rice or rice noodles, garnished if desired.
