- In a stand mixer, combine all-purpose flour, sugar, instant yeast, warm milk, melted butter, and salt. Mix on low speed for about 4–5 minutes until the dough is smooth and elastic.
- Transfer the dough into a lightly greased bowl, cover it, and place it in a warm area for 30–60 minutes, or until doubled in size.
- Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper. Turn the risen dough out onto a floured surface and divide into 12 pieces.
- In a large pot, bring 4 cups of water to a boil and stir in 1/4 cup of baking soda. Boil the pretzel bites for 30 seconds, turning them halfway through.
- Brush each bite with an egg wash and sprinkle coarse salt on top. Bake for 12–14 minutes or until golden brown.
