Cooking Steps
  1. Begin by patting the chicken thighs dry with paper towels; season both sides with kosher salt and freshly ground black pepper.
  2. If your slow cooker has a sauté mode, turn it on and add a drizzle of extra-virgin olive oil. Heat for 2-3 minutes.
  3. In a mixing bowl, combine soy sauce, ketchup, honey, garlic, ginger, Sriracha, and lime juice. Whisk until well blended.
  4. Place the seasoned chicken thighs into the slow cooker and pour the sauce over them. Cook on low for 5-6 hours or high for 2-3 hours.
  5. Once cooked, scoop out chicken thighs and drizzle with sauce. Serve over cooked rice.
