Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the diced onion over medium heat for about 5 minutes until soft and translucent.
  3. In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix until just combined.
  4. Transfer the mixture into the greased baking dish and shape it into a loaf.
  5. Sprinkle the remaining Parmesan cheese generously over the top and optionally add paprika or Italian seasoning.
  6. Bake for 45-50 minutes until golden and the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for about 10 minutes before slicing to retain moisture.
