- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Sauté the diced onion over medium heat for about 5 minutes until soft and translucent.
- In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix until just combined.
- Transfer the mixture into the greased baking dish and shape it into a loaf.
- Sprinkle the remaining Parmesan cheese generously over the top and optionally add paprika or Italian seasoning.
- Bake for 45-50 minutes until golden and the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing to retain moisture.
