Method
 

Step-by-Step Instructions

  2. Chop sweet potatoes and carrots into 3/4-inch to 1-inch pieces and place them in a large baking dish.
  3. Mince garlic and drizzle olive oil and maple syrup over the vegetables. Add thyme, rosemary, cinnamon, and salt.
  4. Toss everything together to coat evenly.
  5. Roast in the oven for 35-40 minutes, stirring halfway through.
  6. Check for doneness by piercing a piece with a fork; they should be fork-tender.
  7. Remove from the oven and serve hot, garnished with fresh thyme if desired.
