Method
 

Step-by-Step Instructions
  1. In a large bowl, whisk together 6 eggs until well-blended.
  2. In a skillet, cook 1 pound of sausage over medium heat for about 5-7 minutes, breaking it apart until browned.
  3. Drain excess fat, combine the sausage with the scrambled eggs and 1 cup of shredded cheese, and stir until melted.
  4. Take a tortilla and place about 2-3 tablespoons of the mixture at one edge, then roll tightly.
  5. Preheat the oven to 400°F (200°C) and grease a baking sheet.
  6. Place taquitos seam-side down on the baking sheet, spaced out for even cooking.
  7. Bake for 15 minutes or until golden brown; broil for an additional 2-3 minutes if desired.
  8. Remove from the oven and serve with salsa, sour cream, or guacamole.
