Ingredients
  

For the Steak Marinade
  • 1 lb sirloin steak can substitute with flank or skirt steak
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • to taste salt
  • to taste black pepper
For the Bowl Base
  • 2 cups cooked grains brown rice or quinoa or cauliflower rice
  • 1 cup roasted chickpeas optional
For the Fresh Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 medium red onion thinly sliced
  • 1/2 cup kalamata olives pitted
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh herbs parsley or dill
For the Tzatziki Sauce
  • 1 cup Greek yogurt or coconut yogurt for dairy-free
  • 1/2 cup grated cucumber squeezed dry
  • 2 tbsp fresh dill
For the Vinaigrette
  • 1 tbsp honey omit for Whole30
  • 1 clove garlic minced

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper.
  2. Coat the sirloin steak thoroughly in the marinade, ensuring every inch is covered. Allow it to marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber (squeezed dry), fresh dill, minced garlic, and a pinch of salt in a bowl. Mix well until smooth and creamy, then refrigerate it for at least 15 minutes.
  4. In a small mixing bowl, whisk together honey, minced garlic, olive oil, salt, and pepper for the vinaigrette.
  5. Heat a skillet over medium-high heat until hot. Remove the steak from the marinade and sear it in the skillet for 4-5 minutes on each side for medium-rare doneness.
  6. Once done, transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
  7. Assemble the Mediterranean Steak Bowl by placing grains at the bottom. Layer with sliced steak, fresh toppings, drizzle tzatziki and vinaigrette on top.
  8. Finish with crumbled feta cheese and fresh herbs, then serve immediately.
