  1. Begin by gently patting the boneless, skinless chicken breasts dry and seasoning with salt, pepper, garlic powder, and onion powder.
  2. Optional: Heat olive oil in a skillet and sear chicken for 2-3 minutes on each side until golden.
  3. In a medium bowl, combine rice, chicken broth, lemon juice, thyme, and oregano.
  4. Transfer chicken to the slow cooker and pour the rice mixture over it.
  5. Layer lemon slices on top of the chicken and rice.
  6. Cover and slow cook on low for 6-7 hours or high for 3-4 hours.
