For the Whipped Cream
  • 2 cups heavy whipping cream can be stabilized with powdered sugar
  • ¼ cup powdered sugar adjust to taste
For Decoration
  • 1 bar bittersweet baking chocolate for chocolate shavings
  • some fresh cherries for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. In a mixing bowl, sift together all dry ingredients and whisk to combine.
  3. In another bowl, whisk the wet mixture until well blended.
  4. Combine the wet and dry ingredients to create the cake batter.
  5. Divide the batter into prepared pans and bake for 28 to 35 minutes.
  6. Cool the cakes in the pans for 15 to 20 minutes, then invert onto wire racks.
  7. Prepare the cherry filling by cooking cherries, sugar, and cornstarch until thick.
  8. Whip the cream with powdered sugar until stiff peaks form.
  9. Slice each cake layer in half horizontally and layer with cherry filling and whipped cream.
  10. Decorate with whipped cream, chocolate shavings, and cherries.
