Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté ground beef and chopped onion for 5-7 minutes until browned and translucent.
  3. Stir in black beans, diced tomatoes with chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
  4. In a separate bowl, combine cornmeal, milk, and egg. Whisk until smooth.
  5. Grease a 9x13-inch baking dish. Pour half of the cornmeal mixture into the bottom.
  6. Layer the cooked beef mixture evenly over the cornmeal base.
  7. Pour the remaining cornmeal mixture over the beef layer.
  8. Sprinkle shredded cheddar cheese and sliced black olives on top.
  9. Bake for 30-35 minutes until golden brown.
  10. Let cool for 10 minutes and garnish with chopped cilantro before serving.
