- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, sauté ground beef and chopped onion for 5-7 minutes until browned and translucent.
- Stir in black beans, diced tomatoes with chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
- In a separate bowl, combine cornmeal, milk, and egg. Whisk until smooth.
- Grease a 9x13-inch baking dish. Pour half of the cornmeal mixture into the bottom.
- Layer the cooked beef mixture evenly over the cornmeal base.
- Pour the remaining cornmeal mixture over the beef layer.
- Sprinkle shredded cheddar cheese and sliced black olives on top.
- Bake for 30-35 minutes until golden brown.
- Let cool for 10 minutes and garnish with chopped cilantro before serving.
