- Preheat your oven to 350°F (175°C). Line or prepare granola bar molds on a baking sheet.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Combine the melted coconut oil, eggs, coconut sugar, vanilla extract, almond milk, and maple syrup with the mashed bananas. Mix until well combined.
- Gradually mix in the dry ingredients: flour, cinnamon, baking powder, baking soda, and salt until just combined.
- Fold in the chocolate chips until evenly distributed.
- Scoop the batter into prepared molds, filling them about three-quarters full.
- Bake for 25-30 minutes, until a toothpick comes out clean or with a few moist crumbs.
- Allow to cool in molds for about 10 minutes before transferring to a wire rack to cool completely.
