  • 1 pound Ground Turkey can swap with ground chicken or beef
  • 2 medium Sweet Potatoes cubed
  • 2 tablespoons Olive Oil for sautéing
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 medium Red Bell Pepper diced
  • 1 teaspoon Smoked Paprika can swap with chili powder
  • 1 teaspoon Ground Cumin optional
  • 1 teaspoon Dried Thyme can substitute with oregano
  • to taste Salt
  • to taste Pepper
  • 1 cup Shredded Cheese (Mozzarella or Cheddar) for topping
  • to taste Fresh Parsley or Cilantro for garnish

Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a skillet, heat olive oil over medium heat, add chopped onion, sauté for 3-4 minutes until translucent.
  3. Add ground turkey to the skillet and cook for 5-6 minutes, breaking it apart with a spatula until browned.
  4. Stir in minced garlic, diced red bell pepper, and cubed sweet potatoes. Add smoked paprika, ground cumin, dried thyme, salt, and pepper; cook for another 3-5 minutes.
  5. Transfer the mixture to the greased baking dish, cover tightly with aluminum foil and bake for about 25 minutes.
  6. Remove the foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted and golden.
  7. Garnish with chopped parsley or cilantro and serve warm.
