Method
 

Marinade and Grill
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the chicken breasts, tossing to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Remove the chicken from the refrigerator and thread marinated pieces onto soaked wooden skewers, leaving space for even cooking.
  3. Preheat your grill to medium-high heat (about 400°F), ensuring grill grates are clean and lightly oiled.
  4. Place skewers on the grill and cook for about 8-10 minutes, flipping occasionally until fully cooked (internal temp 165°F).
Prepare Feta Dip
  1. In a blender, combine feta cheese, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and fresh herbs. Blend until smooth.
Assemble Grazing Board
  1. Arrange grilled chicken skewers on a serving board alongside bowls of creamy feta dip, sliced cucumbers, cherry tomatoes, Kalamata olives, roasted red peppers, and warm pita. Garnish with fresh herbs.
