Sauce Preparation
- In a medium saucepan, combine honey, butter, hot sauce, lemon juice, lemon pepper seasoning, and chili flakes. Heat over medium flame, stirring frequently for 3-4 minutes until thickened and glossy.
- Taste and adjust seasoning before setting the sauce aside.
Shrimp Preparation
- Dry shrimp thoroughly with paper towels. In a large zip-top bag, mix cornstarch, lemon pepper seasoning, and salt. Add shrimp, seal, and shake to coat evenly.
Frying Shrimp
- Heat 1 inch of neutral oil in a large skillet to 375°F (190°C). Fry shrimp in batches for 90 seconds per side until golden brown. Drain on a wire rack.
Coating with Sauce
- Transfer fried shrimp to a large mixing bowl, pour hot honey lemon pepper sauce over, and toss gently to coat. Garnish with lemon zest and scallions or chives before serving.
