- Prepare the Vegetable Filling: Heat olive oil in a large skillet, sauté mushrooms for 5 minutes, add spinach and garlic, cook until spinach wilts, season and set aside.
- Make the Béchamel Sauce: Melt butter, stir in flour to create a roux, whisk in warm milk, cook until thickened, season with nutmeg, salt, and pepper.
- Prepare the Lasagna Noodles: If pre-cooked, boil salted water, cook noodles until tender, drain and let cool. No-boil noodles can be set aside.
- Assemble the Lasagna: Preheat oven to 375°F. Spread a thin layer of béchamel, layer 3 noodles, vegetable filling, ricotta, mozzarella, and béchamel. Repeat two more times.
- Bake: Cover with foil and bake for 25 minutes. Remove foil for last 15 minutes to brown cheese.
