For the Béchamel Sauce
  • 3 tbsp Butter use dairy-free for vegan
  • 3 tbsp All-Purpose Flour swap with gluten-free flour for a gluten-free option
  • 3 cups Milk any type, including almond for dairy-free
  • 1/2 tsp Nutmeg ground, optional but recommended
For the Lasagna Layers
  • 9 pieces Lasagna Noodles no-boil or pre-cooked
  • 2 cups Shredded Mozzarella Cheese freshly grated melts better
  • 1/2 cup Grated Parmesan Cheese nutritional yeast can substitute for vegan
  • 1 cup Ricotta Cheese cottage cheese can be a lower-fat alternative

Method
 

Step-by-Step Instructions
  1. Prepare the Vegetable Filling: Heat olive oil in a large skillet, sauté mushrooms for 5 minutes, add spinach and garlic, cook until spinach wilts, season and set aside.
  2. Make the Béchamel Sauce: Melt butter, stir in flour to create a roux, whisk in warm milk, cook until thickened, season with nutmeg, salt, and pepper.
  3. Prepare the Lasagna Noodles: If pre-cooked, boil salted water, cook noodles until tender, drain and let cool. No-boil noodles can be set aside.
  4. Assemble the Lasagna: Preheat oven to 375°F. Spread a thin layer of béchamel, layer 3 noodles, vegetable filling, ricotta, mozzarella, and béchamel. Repeat two more times.
  5. Bake: Cover with foil and bake for 25 minutes. Remove foil for last 15 minutes to brown cheese.
  6. Serve: Allow to rest for 10 minutes before slicing to set layers. Enjoy with a side salad or bread.
