Cooking Steps
  1. Season the thin strips of chicken with sea salt and ground pepper. Preheat a heavy-bottomed skillet over medium-high heat for 2 to 3 minutes.
  2. Add butter to the skillet, and once foamy, add the seasoned chicken strips. Cook for 6 to 8 minutes until golden brown and cooked through.
  3. Sauté diced onion and minced garlic in the same skillet for about 5 minutes until onions are translucent.
  4. Pour in chicken stock and add sliced roasted red peppers, allowing it to simmer for about 5 minutes until reduced by half.
  5. Whisk in heavy cream and shredded Parmesan cheese off the heat to create a creamy sauce.
  6. Add Italian seasoning and drained pepperoncini, stirring well to combine, and let simmer for 3 to 4 minutes.
  7. Return the browned chicken to the skillet, stirring gently until well-coated, and simmer for an additional 5 to 7 minutes.
  8. Serve the dish over rice, pasta, or vegetables.
