  • 1 small onion, finely diced Brings sweetness and depth; shallots offer a milder flavor alternative.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large skillet over medium heat, cook your breakfast sausage or crumbled bacon until browned, about 5–7 minutes. Drain excess grease and let cool slightly.
  3. Spread the thawed hash browns evenly across the bottom of the greased baking dish, pressing them down for even coverage. Layer cooked sausage or bacon on top, followed by diced onion and bell pepper.
  4. Sprinkle 1½ cups of shredded cheese over the mixture in the baking dish for even coverage.
  5. In a mixing bowl, whisk together eggs, whole milk, garlic powder, salt, and black pepper until combined. Pour this egg mixture evenly over the layered ingredients.
  6. Top with remaining ½ cup cheese. Cover tightly with aluminum foil and bake for 30 minutes, then remove foil and bake for another 15–20 minutes, or until eggs are set and cheese is golden brown.
  7. Let the casserole cool for about 5–10 minutes before slicing. Garnish with chopped fresh parsley before serving.
