  • 4 slices bacon cooked and crumbled

  • 1 cup mayonnaise can substitute with Greek yogurt
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 tablespoon sugar optional

Method
 

Step-by-Step Instructions
  1. Cook a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and let cool.
  2. Chop broccoli into small florets and dice the onion. Slice the bacon if using and set all aside.
  3. In a mixing bowl, combine mayonnaise, red wine vinegar, sugar, salt, and pepper. Whisk until smooth.
  4. In a large bowl, combine cooled pasta and dressing. Add broccoli and onion, and mix gently. Reserve bacon for later.
  5. Cover and chill in the refrigerator for at least 3 hours or overnight.
  6. Before serving, stir in crumbled bacon. Serve chilled.
