  • 8 oz Rotini Pasta or penne or chickpea pasta
  • 2 cups Cooked Chicken Breast diced; rotisserie or grilled chicken
  • 1 cup Corn Kernels fresh, canned, or grilled
  • 0.5 cup Red Onion diced
  • 1 cup Sharp Cheddar Cheese shredded
  • 1 cup Mayonnaise or Greek yogurt
  • 0.5 cup Barbecue Sauce reduced-sugar variety for health
  • 2 tbsp Apple Cider Vinegar or lemon juice
  • to taste Salt
  • to taste Black Pepper
  • 0.25 cup Chopped Fresh Parsley optional

Method
 

Step-by-Step Instructions
  1. Cook rotini pasta in salted boiling water until al dente, about 8-10 minutes. Drain and cool under cold water.
  2. In a mixing bowl, combine mayonnaise, barbecue sauce, and apple cider vinegar. Whisk until smooth.
  3. Add cooled pasta, chicken, corn, red onion, and cheddar cheese to the dressing. Fold gently to combine.
  4. Season with salt and black pepper to taste.
  5. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  6. Before serving, mix in chopped parsley. Serve chilled.
