Ingredients
  

For the Salmon Bites
  • 1 pound Salmon Fresh, skinless cubes
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Olive Oil or cooking spray
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha adjust for heat preference
  • 1 tablespoon Honey optional
  • 1 tablespoon Lime Juice or lemon juice
For Bowl Assembly
  • 2 cups Cooked Jasmine Rice or cauliflower rice
  • 1 cup Shredded Purple Cabbage
  • 1 medium Avocado sliced, optional
  • 1 cup Shredded Carrots
  • 2 tablespoons Green Onions sliced
  • 2 tablespoons Cilantro for garnish
  • 1 tablespoon Sesame Seeds for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) or air fryer to 390°F (200°C).
  2. Season the salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
  3. Press each salmon piece into panko breadcrumbs for an even coating.
  4. Arrange salmon pieces on a baking sheet or in the air fryer basket. Bake for 12 minutes or until golden and crispy.
  5. While cooking, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a bowl.
  6. Assemble bowls with cooked jasmine rice, topped with purple cabbage, avocado, shredded carrots, and crispy salmon.
  7. Drizzle with Bang Bang sauce and garnish with green onions, cilantro, and sesame seeds.
